It’s too good with any kind of Non-veg food too.
Here are the ingredients. 1 cup shredded fresh coconut, 1 fresh slit green chilli, coriander leaves, crushed garlic, 10-12 kokum, 1/2 tsp cumin powder, 1/2 tsp black salt and salt to taste.
We need coconut milk first. For that transfer grated fresh coconut into a blender jar. Add 1 cup hot water & 1 cup coconut.
You can make thick coconut milk by using hot water. Close the lid and keep the jar aside. Coconut milk is getting ready. Take kokum into a pan. Turn on the gas.
Add a little water and cook kokum nicely. We will make pulp or aagal from it. I have cooked kokum on medium heat for about 7-8 minutes.
Mashed kokum well while cooking. Aagal is ready. You can’t see the proper colour of aagal in the black pan. It gets a nice colour. I will take it out into a bowl to show you.
Aagal gets fantastic colour. Turn off the gas and let the mashed kokum cool down. I have rested fresh coconut and hot water in it for about 10 minutes.
Blend this in a mixer for about a minute or two. After blending for about a minute, take a bowl. Keep a Steiner on it. Put a cotton cloth in the strainer.
And strain the coconut milk through it. This first batch of milk is thick milk. If you want to dilute it a little more Then transfer the coconut into the blender jar again.
Add a little water again, blend once more and strain it. You can repeat the procedure 2-3 times. I have made coconut milk. It has got nice consistency, neither too thick nor too thin.
I added water, blended and strained twice. Strain kokum aagal in the milk. About 4 tsp is required. It has begun to get nice colour immediately after adding aagal.
Homemade sol kadhi doesn’t get pink colour same as the one that we get in the market. As food colour is added in the store-bough sol kadhi.
Add garlic, green chilli, and black salt. Black salt is salty. So, add very little regular salt. Add cumin powder. Mix everything well together.
You can taste it once. It has got perfect taste. Perfect taste of garlic, and green chilli. What are we going to do now? We have added whole green chilli and garlic. You also can blend it and add it.
But blending gives a very strong flavour. To avoid that I strain sol kadhi. Strain the whole mixture into a jar. Sol kadhi is already.
Add finely chopped coriander leaves for garnishing. You can add ice cubes in sol kadhi. Or chill it in freeze and serve.
